Whether it is wood or composite (PVC), NEVER fry a turkey on a deck! Not only could frying your turkey on your deck ruin your deck, it could lead to fire and injury. Gallons of flammable oil could easily spill, burning your wood deck or melting your PVC deck. While you absolutely need to fry that bird outside, do it AWAY from your house.

There are a few other tips for frying your turkey safely.

Make sure your turkey is COMPLETELY thawed. “Almost thawed” is not good enough. Even if the smallest part of your bird is still crispy cold, you could be asking for a hot meets cold disaster.

Don’t use too much oil. A great way to avoid this is with a water test. Put your turkey in the fryer and fill with water to the appropriate line, then remove the turkey and you have the fill line for the oil.

Use the right type of oil. All oils are not created equal. If you use frying oil that has a too low of a smoking point, you risk the whole pot going up in flames. If you use oil that is old and has been used too many times, you also risk the oil going up in flames. A new jug of peanut oil is your best choice. Peanut oil has a high smoking point, lowering your risk of creating a huge disaster in the back yard.
